Ingredients (for 12 muffins):

  • 1 cup of wheat or spelled flour
  • 1/2 cup Tree Nuts low fat hazelnut flour
  • 1/3 cup of cane sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 cup of candied orange peels
  • 1/2 cup of hazelnuts, whole or in pieces
  • 2 eggs
  • 1/2 cup of hazelnut oil
  • 3/4 cup of orange puree - make puree from whole oranges or from squeezed peel
  • 1 teaspoon of vanilla extract
  • 1/4 cup of plant-based or plain milk

for sprinkling:

  • 2 tablespoons of cane sugar
  • 2 tablespoons of hazelnuts in small pieces

Hazelnut-orange muffins

  1. Mix flour, sugar, baking powder, baking soda and salt together.
  2. Add orange zest and nuts
  3. In another bowl, whisk together the beaten eggs, oil, vanilla extract, orange puree, and milk; lightly beat with a whisk.
  4. Combine ingredients from two dishes and mix briefly and not thoroughly - only until ingredients are combined, lumps should remain.
  5. Spread the dough in muffin cups and sprinkle the sugar and nut flakes on top.
  6. Put in a preheated oven and bake for 20 minutes at 200 degrees.
  7. After baking, let it cool slightly - you can serve it warm or after it has completely cooled down
